This my own recipe inspired by Googling based on ingredients I had on hand, particularly apples, since they go well with pork. I opted to serve mine with half an avocado sprinkled with green onion.
Ingredients:
Pork Loin Roast
4 Granny Smith Apples
1 Small Onion
1/4 cup Apple Cider Vinegar
4 Garlic Cloves, minced
Spices:
1 Tbsp Chili Power
1 Tsp Cumin
1 Tsp Coriander
1/2 Tsp Cinnamon
2 Bay Leaves
Slice apples and onions, mince garlic, place in slow cooker, adding bay leaves and vinegar. Mix spices and rub over pork loin. Place pork on top. Set to slow cooker to auto (high) for 3-4 hours.
Salt to your liking; I’ve found spice rubs that include salt are often too salty and it easier just to add afterward. I served my roast with avocado sprinkled with green onion. White rice would work well too.
